INGREDIENTS:
- 3T olive oil
- 1/2 c chopped onion
- 1 lb chopped mushrooms
- 2 c long grain rice (wild preferably)
- 1/4 c chopped parsley
- 3/4 c melted butter
- 2 1/2 c chicken stock
DIRECTIONS:
- saute onions & mushrooms in olive oil
- add in rice and saute for 2 min
- layer all ingredients in casserole dish
- bake 350 for 1hr
- top with chopped parsley
